Garlic Roasted Carrot Fries Recipe

 

In our house we LOVE carrots!  I don’t normally serve them as a side dish, my crew just eats them raw or we put them in roasts and stews.  I decided to switch things up and try a new way to cook them to give us some variety in our side dishes.

I prefer them to be thinner (so do my kids in braces) so I decided to try carrot fries! They were good the first time, but then I started adding garlic and it took them over the top. If you don’t like garlic, they’re still good without!

(Note: I didn’t use the air fryer, but you can and you’ll cut the time in half.)

Garlic Roasted Carrot Fries

When I say these are easy, I mean easy. All you need is cooking spray, carrots, salt, pepper, and minced garlic.

The first step is to peel, wash, and slice the carrots. I usually the carrots in half and then cut each of those sections into fry shapes.

Then lay the carrots on a baking sheet, spray with cooking spray (I use the olive oil kind), and use your hands to mix it around. Then add salt and pepper.

Cook for 25 minutes at 400 degrees. Once they come out of the oven, add as much minced garlic as you want and stir it around.

I make these when we’re having something that goes with fries, like hamburgers. I do make something like tater tots for my kids, but the carrot is the vegetable. And without any added oil, they are about the healthiest “fry” option you can find!

Ingredients

  • 2 pounds carrots
  • Olive oil cooking spray
  • Salt
  • Pepper

Directions

  1. Preheat the oven to 425 degrees.
  2. Peel, wash, and slice the carrots into fry shapes.
  3. Place on baking sheet and spray with cooking spray, using your hands to mix them.
  4. Add salt and pepper.
  5. Bake for 25 minutes, then add in minced garlic when you pull them out.
