Banana Bread Oat Muffins Recipe

My kids go through phases of eating a banana a day and acting like bananas don’t exist, so fairly often I find myself with a lot of super ripe bananas and need to come up with something to do with them. I have another recipe for chocolate banana bread, which is delicious, but I had a huge bag of oats and wanted to see if I could use those to make something new.

These banana bread oat muffins were everything I wanted them to be, and I even made a batch with chocolate chips because you can never go wrong by adding chocolate. I kept half for my kids and took the rest to a new family at church. You could also make this into actual banana bread, but the baking time will need to be at least doubled!

Banana Bread Oat Muffins Recipe

The first step in this recipe is to make your own oat flour. You can skip this if you have pre-ground oat flour!

I buy enormous bags of oats from Costco because we use them for all kinds of things.

To make it into flour, I just fill up my food processor to the max capacity and turn it on until it’s as fine as possible.

This is about 5 cups of oat flour.

I like to process a bunch at a time, so I kept making more oat flour until this container was all the way full. You can use oat flour in any recipe that calls for all purpose flour and it truly doesn’t make a huge difference!

Now it’s time to mix up the wet ingredients. Add those ripe bananas to your stand mixer bowl.

Melt some butter and let it cool a bit.

Then add the butter and the eggs and vanilla to the bananas and mix to combine.

Place your dry ingredients in another bowl and add this slowly to the wet mixture.

The batter will be thick, and if you want to add in chocolate chips, this the time to do it.

I used my silicone muffin pan, which is so much easier to clean than the “nonstick” pans.

Fill them up about 2/3 of the way full.

With the remaining batter, I added chocolate chips.

These cook for about 20-25 minutes and come out fresh and delicious. Let them cool, or eat one right away!

Banana Bread Oat Muffins Recipe

Ingredients

  • 1.5 cups all-purpose flour
  • 1.5 cups oat flour
  • 2 tsp. cinnamon
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 8 bananas
  • 2 eggs
  • 2 tbsp. vanilla extract
  • 1/4 cup butter, melted
  • 6 tbsp. brown sugar
  • 1/4 cup white sugar
  • 1/2 cup chocolate chips (optional)

Directions

  1. Place the dry ingredients in a bowl and mix.
  2. Add the bananas, eggs, melted butter and vanilla to a bowl and mix. Add sugar and mix it in.
  3. Slowly mix in the dry ingredients.Once this mixture is combined, you can add in chocolate chips if you’re using them.
  4. Spray a muffin pan with cooking spray and fill each cup about 2/3 way full with the batter.
  5. Bake at 350 degrees for 20-25 minutes. Let cool on a cooling rack.
